The cultivation
The wine cultivation area is composed of hills, whose slopes have been shaped over the years by the industry of men. The landscape is wonderful, but the area is hard to cultivate with its wineries planted on steep slopes, where sometimes it’s hard to stand still. The operations in the winery are necessarily made manually in order to keep the entirety of the grapes’ peel, essential for the preservation and the following transfer of the flavor on the wines. The hills are cultivated with lines in “girappoggio”, an agricultural system of the land used to keep its fertility and to limit the erosive events due to the slope. The grapes of the old wineries, still grown in the whole area, are used by the producer to create the grapes for the winemaking, together with little portions of Pinot and Chardonnay.
